Basil Pesto

What in the world is Pesto! Pesto has been a mainstay in Italian recipes for generations. Pesto is a green paste consisting of mainly basil, parsley, garlic, a cheese, pine nuts and olive oil.
Use Pesto on hot buttered pasta, make tomato bruschetta.
A simple salad recipe for pesto is place a bed of lettuce on individual salad plates, place a large slice tomato, top with a dollop of pesto, top pesto with a generous helping of crumbled cheese and chopped green onions.

I usually put sunflower seeds in our pesto instead of pine nuts. Sunflower seeds are not as expensive, easy to find,have a good shelf life and adds a salty nutty flavor to the pesto.

I make several batches of pesto each each year omitting the nuts and cheese. I place the pesto in ice cube trays until frozen. I then remove the frozen cubes and place in a zip lock freezer bag. These cubes can be added to your soups stews,tomato sauces. You can use your imagination.

Cosmic Charlie’s Scarlet/Fire Panini

*Last summer, we had a Market Cook-Off at The Champaign County Farmer’s Market, in June. This panini won two awards…Best Use Of Market Products and Cook-Off Champ!! Below is my inspiration and the ingredients for you to try…it all starts with a loaf of Cosmic bread!

My entry is a panini made with Cosmic Charlie’s Parmesan Oregano Bread and all local veggies from fellow vendors! The sandwich gets it name from a combo of songs that used to be played, together, at a Grateful Dead concert. The songs are Scarlet Begonia and Fire On The Mountain. When you heard the familiar tinklings of Scarlet Begonia starting to filter through the crowd, you knew that it would seque into Fire On The Mountain. Deadheads shortened the titles and lovingly would refer to the combo as Scarlet/Fire. This was a familiar happening at Dead shows with many of the song combos that were joined, together. Since my business, Cosmic Charlie Bread, gives a nod to my love of The Grateful Dead, and their song, Cosmic Charlie, is my inspiration, and since I am a loving Deadhead, Scarlet/Fire seemed like the perfect title to give a perfect sandwich!

The panini will start with Cosmic’s Parmesan/Oregano bread. I grow my own herbs, organically, and my bread is all natural, unbleached flour, with no preservatives or oils. The flavors of the bread will cosmically unite with the Scarlet part of the duo in the form of sliced tomatoes from Lonny’s Green Acres. The Fire part of the duo will come from the kick of Mary Jane garlic, from JC Growers, that will be roasted, carmelized and spread on the bread. The Fire also comes from the dried red pepper that runs through my Parmesan/Oregano bread. The “rifts” that will bring the harmony all together will be roasted sweet onions and banana peppers from Lonny’s Green Acres. You always need a core to bring the group, all together, and for me, that was always Jerry Garcia, at the shows, and in the sandwich, it will be provolone cheese from the local Yutzy’s cheeses.

After the first bite, I hope that the judges and fans will see a “sky that’s yellow and a sun that’s blue” (nod to a verse in Scarlet Begonias), that takes them into the flavorful world of Cosmic Charlie.

Cosmic Charlie's Christmas Morning French Toast

I host a large brunch, on Christmas mornings, at our house. One of the most popular dishes is my overnight french toast using Cosmic Charlie’s Sugaree (sugar/cinnamon)Bread! Feel free to leave the Grand Marnier out, leave it in or even sub a different flavor. This is so good served with slices of baked sausage and real maple syrup….

1 to 1 1/2 French bread, cut into 1 1/2 inch slices
4 c. heavy cream, light cream or milk
4 eggs
4 tbsp. sugar
4 tbsp. Grand Marnier
2 tbsp. orange zest
Confectioners’ sugar

Beat together cream, eggs, sugar, Grand Marnier and orange zest. Arrange bread slices flat in glass baking dish and pour mixture over bread. Soak for 2 hours, turning bread after 1 hour until mixture is absorbed by bread. Put slices on non-stick cookie sheet and bake in preheated 400 degree oven for 20 minutes, turning bread after 10 minutes. Remove from oven and sprinkle with confectioners’ sugar. 4-6 servings. Serve with orange butter.

ORANGE BUTTER:

6 oz. butter, softened
Juice of 1 orange
1 tbsp. Grand Marnier
1/2 c. powdered sugar

Mix together, put in a serving dish or wrap in wax paper to form log. Refrigerate until serving. Spread on Grand Marnier French Toast.

Frosted Ginger Cookies

This is a favorite ginger cookie in our house. Most of the time when I bake these I don’t add the icing. I serve these especially on Thanksgiving and other family gatherings and offer pumpkin dip to dip the cookies. Pumpkin lovers are plentiful in this family.

These cookies have a soft texture and the subtle blend of spices isn’t over powering. Great with a cup of tea or coffee as an afternoon snack or in the evening after dinner.

Gooey Apple Sorghum Cake

This recipe is from a 16 page, free recipe book WalMart put out before Christmas a few years ago. We love this recipe… it’s one of my 3 year old’s most often requested desserts! It calls for a caramel sauce as the topping, but I think the result is more like a bar dessert than a cake, and it is delicious without the sauce… very moist and delicious warm or cooled.

Overnight Yeasted Spelt Waffles

These waffles are a breeze to prepare, as the prep is done the night before. In the morning, simply break an egg, mix and pour the batter into a hot waffle iron. The yeasty/sourdough like taste from the overnight fermentation is healthy and delicious. These waffles are crispy on the outside and perfectly soft inside!

Pawpaw ice cream

SHH "Paella" Fried Rice

Remember you absolutely cannot make delicious rice using freshly cooked rice.Cook the rice a day or 2 ahead of making this recipe. Use a long grain rice and cook according to directions on the package. You will need 4 cups of cold cooked rice. You could also purchase the cooked rice from a chinese restaurant.

The chorizo sausage is hard to find. Oakview Farms carry ground chorizo in a 1 lb. pkg. I the whole pkg. I have also substituted the chorizo for ground sweet Italian Sausage. However you do not get the same flavor or color that the spices of the chorizo gives to the dish.

SHH Irish Soda Bread

This is a salute to Nana! Marie Abigail O’Reilly Stapleton AKA Nana. Happy St. Patrick’s Day. The first thing Irish my husbands mother showed me how to bake was Irish Soda Bread. Her bread was from scratch and baked on a flat skillet in the oven. A loaf was always sitting on her kitchen table waiting for us to slice it up smother it in butter and savor the goodness and love with which it was baked. I bake Irish soda Bread especially on St. Patrick’s Day but over the years I have taken a short cut from her original recipe. Back when I was a busy working mom and busy children. This is my Bisquick Recipe Version. Enjoy

SHH Meatloaf or meatballs.

This is a never fail meatloaf recipe, tastes the same every time no guessing what herbs or spices to use. This recipe uses 3 lbs of meat. You can use all ground beef or follow the recipe with the ground beef, ground turkey, and sausage.

I sometimes will divide the mixture in half. I will make a smaller meatloaf and make meatballs out of the other half. (Makes 12 meatballs) Bake them both at the same time in the oven. Reduce the baking time to 45 minutes for the meatloaf. Freeze the meatballs to serve later with Spaghetti, Meatball sandwiches or with a pesto sauce over pasta.

To make 1 1/2 inch party meatballs: Set oven at 350 degrees. Line the bottom of 2 cookie sheets with foil. Place meatballs an 1 to 1 1;/2 inches apart inches apart not touching the sides of the pan.(you can fit about 25 to 30 meatballs in each pan. Bake for approx. 30 to 40 minutes. I turn the meatballs after the first 10 min of baking,this keeps them perfectly rounded. Serve in a crock pot with your favorite sauce, or freeze for later use.

SHH Tzatziki ( Greek Yogurt, Cucumber, and Dill Dip)

Dear Customers, Here is the Greek sauce we made and sampled at the Champaign county Farmers Market in Urbana and also at the Urbana Antique Show & Flea Market. In this Greek recipe we used Swisher Hill Herb’s Dill Dip as a substitute for the fresh dill.
