We found this recipe on another sorghum grower’s website, www.muddypondsorghum.com, and loved it! Very easy and very tasty! I have increased the sorghum and cut out the white sugar completely, and it turned out fine… we like the extra sorghum taste :)

The ultimate combination of salty, sweet and crunchy. This recipe makes quite a bit, but is so easy!! My mom grew up making caramel corn for her family regularly, and we’ve been playing with our favorite family recipes, using sorghum in place of things like corn syrup, maple syrup, honey, and some of the white or brown sugar, with delicious results! Warning: this caramel corn is seriously addicting!

For our 2nd Sorghum Festival this past October, we wanted to have a second sample for people to try using the sorghum, in addition to our cookies that are a hit everywhere we take them. My mom actually played around with a caramel recipe until she came up with these chews, which we told her she perfected with flying colors!! They are VERY soft and chewy, with a distinct, sweet and tangy flavor.

My mom gave me a cookbook for Christmas that had this recipe in it, but it called for whole wheat flour. I just substituted spelt because it’s what we have, and it was a very simple, no fuss bread recipe. Great for breakfast or snacking, even for dessert with jam, fruit butter, or honey.

These are delicious little crackers that lend well to spelt’s nutty tones. They are great with cheese, dips, or even alone. The thinner you roll them, the crispier they will be. You don’t have to use a food processor as the recipe calls for – I don’t have one… I just use a pastry cutter, but a fork or two butter knives work just as well :)
